THE
CHALLENGE

Beverage quality is a great challenge to all manufacturers and yet all consumers expect great quality and product consistency whenever and wherever they are consumed. Moreover, there is a growing demand for products carrying clean labels with only few natural ingredients.

However, quality spoilage caused by the Alicyclobacillus family of bacteria (also known as TAB) is a frequent quality issue representing a huge challenge for the beverage industry, costing time, money, and brand reputation losses with potential costly recalls.

Unfortunately, there is no guarantee for TAB-free beverage ingredients. TAB source can come from all kinds of raw materials, such as water, fruit concentrate, pectin, sugars etc..

Current TAB treatments do not prove to be effective. Commonly used pasteurization processes activate TAB spores (since they are thermophilic and acidophilic microorganisms), filtration is only partially effective, and GMP (Good Manufacturing Processes) can only minimize these spore forming bacteria but cannot solve the issue entirely.

As a microorganism, TAB growth is naturally illusive and might be dismissed due to false negative QC results. Even the presence of very low TAB levels (1spore per 1L) can cause and result in costly recalls.

HOW TO IDENTIFY TAB?
Whilst not specifically harmful for humans, the spoilage caused by spores ruins the organoleptic properties of beverages. Microbial TAB spoilage is identified by sensory changes of “medicinal” off-flavors or hazy appearance, depending on the specific bacteria type.
